Shelton seafood chef offers cooking lesson in Olympia

Xinh Dwelly of Xinh’s Clam and Oyster House in Shelton can teach you a thing or two about cooking in Olympia next week.

Xinh will be at the Bayview School of Cooking 6-8:30 p.m. on Sept. 21. The event is located in the school’s demo kitchen on the second floor of Bayview Thriftway, 516 W. Fourth Ave., Olympia. Cost is $65.

Xinh, known for her entertaining anecdotes and stories, is also known for her “legendary” knowledge of seafood, according to a presss release.

“This evening she’ll be preparing Oysters with a Garlicky Herb-Lemon-Ginger Butter Sauce and Skewered Prawns with a Lime-Chipotle Marinade,” the release states. “She’ll also be pairing Mahi Mahi and Chicken Tenders with her delicious Peanut Sauce for a memorable feast prepared over the fire. You won’t want to miss this one!” A complementary wine pairing is included.
